Recipes for the Classroom

USDA Compliant Recipes

These recipes meet the USDA Smart Snack guidelines for sale in school districts that participate in the NSLP.  Recipes must be followed as written.  It is especially important that portion size / number of servings is strictly adhered to.  If you would like to submit a recipe for approval, please send the recipe to Dave Wilson. Keep in mind the following guidelines when submitting recipes.  Serving portions must:

  • Have either have whole grains as the main ingredient, or be 50% whole grain

  • Have fruit, vegetable, dairy, or protein as the main ingredient

  • Be no more than 200 calories

  • Be low in fat and low in sodium

Rice Krispy Treats

Ingredients:

3 tablespoons margarine or butter1 (10 ounce) package regular marshmallows 6 cups crisped rice cereal

Directions:

1. In large saucepan melt margarine over low heat. Add marshmallows and stir until completely melted. Remove from heat.
2. Add Crisped Rice cereal. Stir until well coated.
3. Using buttered spatula or wax paper, press mixture evenly into 13 x 9 x 2-inch pan coated with cooking spray. Cool. Cut into 2-inch squares. Best if served the same day.

Cranberry Trail Bars

Cook Time: 10 Minutes
Ready In: 25 Minutes
Servings: 24

Ingredients:

1/3 cup sesame seeds
1/3 cup raw sunflower seeds
1/3 cup chopped pecans
1/3 cup chopped almonds
1/3 cup unsweetened flaked coconut
3 1/2 cups crisp rice cereal
1 cup dried cranberries
3 tablespoons peanut butter
2 tablespoons butter or margarine
7 cups miniature marshmallows

Directions:

1. In a large skillet over medium heat, stir together the sesame seeds, sunflower seeds, pecans and almonds. Cook until the sesame seeds are starting to turn golden, about 3 minutes. Add coconut, and stir until sesame seeds are golden. Watch carefully, as they burn easily. Stir in the cranberries and cereal, and remove from heat.
2. In a large saucepan, combine the peanut butter, butter and marshmallows. Cook and stir over low heat until marshmallows are melted. Pour in the cereal and nut mixture, and stir until evenly coated. Press lightly into a greased 9×13 inch baking dish. Let stand until cool, then cut into bars. Store in an airtight container, or wrap individually in plastic wrap

No Bake Granola Bars

Servings: 24

Ingredients:

4 cups rolled oats
2-1/2 cups natural crunchy peanut butter
2 cups ground flaxseed
1-1/2 cups honey
1-1/2 cups dried cranberries
1 cup chocolate chips
1/2 cup sliced almonds

Directions:

1. Stir oats, peanut butter, flaxseed, honey, cranberries, chocolate chips, and almonds together in a bowl; press into a 9×11-inch baking dish, using the back of a spatula to press into a flat layer.
2. Refrigerate mixture at least 1 hour.
3. Cut into 24 bars and wrap each individually in plastic wrap for storage

Whole Wheat Chocolate Chip Cookies

Ingredients:

3/4 cup margarine
1 cup white sugar
1 cup light brown sugar
1 1/2 teaspoons vanilla extract
2 eggs
2 cups sifted whole wheat pastry flour
1 cup all-purpose flour
3/4 teaspoon baking soda
1 teaspoon salt
2 cups semisweet chocolate chips
1/2 cup chopped walnuts (optional)

Directions:

1. Preheat the oven to 375 degrees F (190 degrees C). Generously grease cookie sheets.
2. In a medium bowl, cream together the margarine, white sugar and brown sugar until smooth. Stir in the vanilla and eggs. Combine the whole wheat flour, all purpose flour, baking soda and salt, gradually blend into the creamed mixture. Fold in chocolate chips and walnuts if desired. Drop by rounded spoonfuls onto the prepared cookie sheet.
3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. For bar cookies, press dough into a 10×15 inch jelly roll pan and bake for 12 to 15 minutes

Oatmeal Cookies

Ingredients:

1 cup sifted whole wheat flour
1/2 teaspoon salt
1/2 teaspoon baking soda
3/4 cup butter, softened
1 1/2 cups brown sugar
1 egg
1/4 cup water
1 teaspoon vanilla extract
3 cups rolled oats

Directions:

1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. Stir together the whole wheat flour, salt and baking soda; set aside.
2. In a medium bowl, cream together the butter and brown sugar until light and fluffy. Stir in the egg, water and vanilla. Mix in the flour mixture, then stir in the oats. Drop by teaspoonfuls onto the prepared cookie sheets. Cookies should be about 2 inches apart.
3. Bake for 12 to 15 minutes in the preheated oven. Remove from baking sheets to cool on wire racks

Whole Grain Brownies

Ingredients:

1/4 cup applesauce
3/4 cup white sugar
2 egg whites
1/4 cup butter, melted
1/4 cup buttermilk
1 teaspoon vanilla extract
1/2 teaspoon coffee flavored extract
1/3 cup unsweetened cocoa powder
1/2 cup whole wheat pastry flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chocolate chips (optional)

Directions:

1. Preheat the oven to 350 degrees F (175 degrees C). Grease an 8×8 inch square pan.
2. In a medium bowl, stir together the applesauce, white sugar, egg whites and butter until smooth. Mix in the buttermilk, vanilla extract and coffee extract. Combine the cocoa, whole wheat flour, baking powder and salt; stir into the sugar mixture just until incorporated. Spread the batter evenly into the prepared pan.
3. Bake for 25 minutes in the preheated oven, until a toothpick inserted in the center comes out clean, but the brownies are still moist. Cool, and cut into squares
